We were in the mood for Filipino food!

Yesterday, our original plans were to head down to Main Beach for a beach volleyball tournament!! Unfortunately, the weather had other plans for us and we got rained out!  Never fear however, as we have a fully equipped kitchen available in Lexis Noosa and hungry teenagers always ready to eat.  The dish for the day? Filipino Chicken Adobo over white rice!.  Here’s what you’ll need!

-1/2 kilo of chicken pieces (we used legs, breast, and wings!)
-1/2 cup of rice vinegar-1/2 cup of soy sauce
-3 cloves of garlic (minced)
-1 large onion (sliced)
-1 Bay leaf
-some veggie oil!
-Black pepper to taste

-Cooked white rice!

First, take the chicken and veggie oil and fry until the chicken is lightly browned all over. Then take the sliced onion and minced garlic and throw that into the pan with the chicken.  When the hot oil spits at you, yell angrily at it until it stops.  Under medium heat, mix in the soy sauce and rice vinegar with the chicken, onion, and garlic.  Stir it up like Bob Marley told you so, then add a bay leaf.  Let it simmer at low heat for 10 minutes until the sauce thickens!  Once it’s all done and ready, serve over a bed of white rice.  Ask the students if they want to eat the concoction that you made for them.  If they say no, give it to them anyways and tell them they can’t play table tennis until they’ve eaten all the food on their plates. Then make them clean up the kitchen!
